MIDI (Musical Instrument Digital Interface) is a technology that's been around ever since the early '80s. It basically allows electronic musical instruments and audio devices to "talk" to one another via commands that send information across several channels. But in short, MIDI guitar pedals are great as you can precisely alter their patches, parameters and a lot more via dedicated MIDI controllers or pedal switchers.

You'll find that most MIDI guitar pedals are quite sophisticated. Simple stompboxes don't warrant the technology, and it's typically Multi-FX units which feature MIDI ports so that you can easily swap and edit their sounds externally.
